Ingredients for 2 people
2 char fillets
2 tablespoons of horseradish
1/8 l white wine
1/8 l cream
Pumpkin seed oil
Beech wood board
Preparing the Ausseer char
Season the char fillets with salt and pepper. Put the dill on the moistened beech wood board and place the fish fillets on the board with the skin face down.
Preheat the grill to 180 degrees Celsius. Place the board with the fillets on the grill and cook until the fish has a slightly transparent look. Cut the vegetables into thin strips and cook them briefly in salted water.
Bring the white wine and cream to the boil, add the horseradish and froth with the hand blender. Serve the vegetables on a plate, place the fish on top and finish with the horseradish sauce and Styrian pumpkin seed oil.
