East Styrian spelt apple crumble cake

Ingredients for 1 cake pan
250 g spelt flour Type 700
60 g sugar
1 TL baking soda oder 1 Pkg. baking poweder
½ TL vanilla sugar
2 EL water
150 g butter
750 g apples
1 TL cinnamon
1 EL butter for the cake pan
2 EL spelt crumbs for the cake pan
Ingredients for the crumble:
150 g spelt flour Type 700
100 g sugar
100 g butter
½ TL vanilla sugar
Method
- Prepare the dough by mixing together the spelt flour, sugar, baking powder and vanilla sugar. Add the water and butter and quickly the mixture into a dough.
- Put the dough in a small bowl, cover it and leave it in the fridge to rest for 30 minutes.
- In the meantime, prepare the crumble. Knead the spelt flour together with the butter, sugar and vanilla sugar to form the crumble and then leave it in a cool place.
- Carefully grease the baking tin with butter and sprinkle with spelt breadcrumbs. Then take the dough out of the fridge, roll it out thinly and put in the prepared baking tin. Pull up the edges of the dough and cool it again.
- Preheat the oven to 180°C top/bottom heating.
- Wash the apples, cut them in half, take out the core and chop them into small pieces.
- Add the cinnamon to the cut apples and put them into the baking tin. Take the crumble out of the fridge and sprinkle it over the mixture. Bake the cake on the middle shelf of the preheated oven for approx. 45 minutes.
