Ingredients for 4 people
800 g skinned Waldviertel carp fillet
Breadcrumbs and ground Waldviertel grey poppy for coating (1/3 breadcrumbs, 2/3 grey poppy)
Flour for coating
750 g potatoes
Mustard, oil, salt, pepper, vinegar, beef soup (hot), pinch of icing sugar

The popular menu for special occasions is an original recipe from the poppy village of Armschlag and combines three important elements of Waldviertel eating & gourmet culture on one single plate. The traditional Waldviertel carp is wrapped in wonderful Waldviertel grey poppy – and we naturally can’t forget the potato salad. All these elements combine to create a typical Waldviertel feast!
Season the carp fillets with salt and drizzle with lemon juice. Coat in flour, egg and poppy crumbs. Fry in fat and serve with potato salad.
To make the potato salad, boil and peel the potatoes and cut them into slices while they are still hot. Combine the icing sugar, onion and oil and carefully mix with the potatoes. Mix together the vinegar, soup, honey, salt and pepper and pour over the potatoes. Carefully mix everything together and taste before serving.
Tip: The potato salad tastes particularly good when marinated with grey poppy oil!
