Potato dumplings stuffed with greaves

Recipe of the region Mühlviertel Highlands

Ingredients for the stuffing

160 g rendered & chopped greaves
35 g white bread croutons
45 g diced & sautéed onions
7 g diced & sautéed garlic
5 g finely chopped parsley
1 g ground caraway seeds
3 g salt
1 g marjoram

Ingredients for the potato mixture

500 g potatoes boiled & pressed
70 g cornflour
70 g flour
60 g egg yolk
90 g butter

Ingredients for the creamy radish salad

300 g peeled beer radish
3 tbsp sour cream
1 tbsp rapeseed oil
½ tsp carraway seeds, whole
Pinch of sugar


Stuffing for the dumplings
Mix all ingredients well and shape the dumplings.
Freeze if necessary.

Potato mixture
Mix the potatoes with the flour and cornflour.
Add and mix in the remaining ingredients quickly and use immediately.

Creamy radish salad
Coarsely grate and salt the beer radish and let it rest for 10 minutes.
Squeeze the radish and mix with the remaining ingredients.

Garnish with finely chopped chives and possibly some gravy.
