Älplermagronen with apple sauce

The Älplermagronen with fried onions and apple sauce are not only delicious in the mountain hut, but also at home.

Ingredients for the Älplermagronen

for 4 persons

  • 500 g Älplermagronen
  • 2 large potatoes, peeled
  • 3-4 onions
  • 50 ml full cream
  • 150-200 g Gruyère or alpine cheese
  • 1 tbsp vegetable stock
  • Salt and pepper to taste
  • Chives to garnish
Ingredients for the apple sauce
  • 4 apples
  • 1 teaspoon cinnamon, ground
  • 1 teaspoon birnel or honey

Preparation of the Älplermagronen

Prepare the salted water for the magrons (pasta). Cut the potatoes into 1-1.5 cm cubes and set aside. Cut the onions into rings and sauté slowly in a frying pan with a little fat.

As soon as the water boils, add the lemons. After the first half of the cooking time, add the potatoes and finish cooking.

Drain the pasta and potatoes, drain well and return to the pan.
Now it's time to add the cream, cheese and stock and mix everything well over a high heat. Season with salt and/or pepper to taste. Make sure that nothing burns, just leave to reduce a little.

Arrange the Älplermagronen in deep plates and arrange the onions on top. If you don't want to miss out on a splash of colour, add some fresh chives on top.

Preparation of apple sauce

To do this, wash the apples, quarter them and remove the core. Cut the slices (with skin) into large pieces and place in a small pan. Add a little water and cinnamon, cover and simmer over a medium heat. Finely blend the apple pieces with a hand blender, add a little sweetener to taste if necessary and serve in bowls.
