South Tyrolean apple strudel

Ingredients for the South Tyrolean apple strudel

  • 125 g butter
  • 125 g icing sugar or sugar
  • 1 pinch of grated lemon zest
  • ½ packet vanilla sugar
  • 1 tbsp milk
  • 1 egg
  • 250 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
Ingredients for the filling
  • 600 g apples
  • 50 g sugar
  • 50 g breadcrumbs, roasted in a little butter
  • 20 g pine nuts
  • 2 tbsp rum
  • 1 packet of vanilla sugar
  • ½ tsp cinnamon
  • 1 pinch of grated lemon zest

Preparation of the South Tyrolean apple strudel

Mix the slightly softened butter with the sugar, lemon zest and vanilla sugar in a bowl to form a homogeneous mixture. Add the egg and milk, mix in the flour, baking powder and a pinch of salt and knead into a dough. Leave the dough to rest for ½ hour.

Peel and core the apples and cut into thin slices. Mix with the sugar, breadcrumbs, pine nuts, rum, vanilla sugar, cinnamon and lemon zest.

Preheat the oven to 180 °C. Roll out the pastry and place on a buttered baking tray. Pour the apple filling onto the dough and fold the dough into a strudel. Brush the strudel with a little egg and bake for 30-40 minutes.
