Styrian scarlet runner bean salad with pumpkin seed oil

Ingredients for the Styrian scarlet runner bean salad

  • 1/2 kg dried scarlet runner beans (Styrian scarlet runner beans are now also available with the EU Protected Designation of Origin PDO)
  • 1 onion
  • Apple cider vinegar
  • Pumpkin seed oil
  • Horseradish
  • Salt, pepper

Preparation of Styrian scarlet runner bean salad with pumpkin seed oil

Soak the scarlet runner beans in lukewarm water the day before. The next day, place the beans in the soaked water and cook until soft (approx. 1 ½ hours). Don't forget to salt the water.

Place the cooked scarlet runner beans in a bowl, sprinkle with finely chopped onion, season with vinegar and Styrian pumpkin seed oil and season with salt and pepper.
