Bacon dumplings
Recipe of the region Niederdorf – 3 Zinnen Dolomites
Ingredients for 20 bacon dumplings
500 g dried wholemeal bread cut into small cubes
250 g diced pancetta
4 eggs
2 tablespoons flour, also wholemeal flour, if desired
500 ml milk or water in case of lactose intolerance
a handful of chives, parsley, leek, onion
Preparation
Sauté the finely chopped onion and leek in butter. Put the bread in a bowl, moisten with milk, then add all the other ingredients and spices over the bread and mix to a smooth dough.
Form dumplings with moistened hands (lukewarm water) and boil in salted water for 15 minutes.
Serve with salad, sauerkraut or bouillon.
