Almkas noodles

Hearty Tyrolean pasta recipe with mushrooms, tomatoes & cheese to recreate.

Ingredients for the Almkas noodles

for 4 persons

  • 400 g pasta (tagliatelle or linguine)
  • approx. 450-500 g mixed mushrooms depending on season and preference
  • 1-2 red onions (approx. 150 g)
  • 150-200 g cherry tomatoes
  • 1-2 cloves of garlic
  • 100 ml dry white wine
  • 120-150 ml vegetable stock
  • 40-60 g truffle butter
  • 2 tbsp olive oil
  • Salt & freshly ground pepper
  • 3 tbsp freshly chopped herbs such as parsley, chives, thyme, rosemary,..
  • 1 hard cheese loaf (e.g. Parmesan) scraped from the top to toss the pasta in it

Preparation of the Almkasnudeln

  • Cook the pasta in salted water until al dente, reserving some of the pasta water.
  • Clean the mushrooms and cut into slices or cubes, depending on their size.
  • Heat the olive oil in a pan and fry the mushrooms well.
  • Finely slice the red onions, chop the garlic and add to the mushrooms and fry briefly. Halve or quarter the cherry tomatoes and add to the pan.
  • Deglaze with white wine and simmer for 1-2 minutes.
  • Add a little vegetable stock and simmer gently until a creamy base is formed. Add a little pasta water if necessary.
  • Reduce the heat and stir in the truffle butter.
  • Fold in the herbs and season with salt and pepper to taste.
  • Lightly scrape out the top centre of the cheese.
  • Add the pasta directly to the cheese and toss vigorously until a creamy emulsion forms.
  • Serve on warmed plates and top with fresh herbs or some fresh truffle.
