Bacon dumplings

Ingredients for the bacon dumplings

approx. 20 dumplings

  • 500 g dried wholemeal bread cut into small cubes
  • 250 g diced pancetta
  • 4 eggs
  • 2 tbsp flour, also wholemeal flour if desired
  • 500 ml milk or water if you are lactose intolerant
  • a handful of chives, parsley, leek, onion

Preparation of the bacon dumplings

Sauté the finely chopped onion and leek in butter. Place the bread in a bowl, moisten with milk, then add all the other ingredients and spices to the bread and work into a smooth dough.

Form dumplings with moistened hands (lukewarm water) and boil in salted water for 15 minutes.

Serve with salad, sauerkraut or broth.
