Bratwurst ragout

Fried vegan sausages in tomato sauce with red chili in a pan

Ingredients for the bratwurst ragout

  • 4 St. Gallen sausages, 130 g each
  • 50 g chopped onions
  • 50 g frying fat or rapeseed oil
  • 250 g tinned tomatoes
  • 1 small chilli pepper, finely chopped
  • 10 g mild curry
  • 10 g cornflour
  • 5 g table salt

Preparation of bratwurst ragout

  1. Cut the sausages into 10 equal pieces, fry briefly in a little fat and set aside.
  2. Sweat the chopped onions with a little fat until translucent, add the tomatoes and simmer.
  3. Add the chopped chilli pepper to taste and season and thicken with the remaining ingredients.
  4. Add the pre-fried sausage pieces and heat briefly.

Tip: Serve with a fresh Bürli or chips.
