Spelt crumble apple cake

Ingredients for the spelt crumble apple cake
for 1 cake tin
- 250 g spelt flour type 700
- 60 g sugar
- 1 tsp baking soda or 1 pkg baking powder
- ½ tsp vanilla sugar
- 2 tbsp water
- 150 g butter
- 750 g apples
- 1 tsp cinnamon
- 1 tbsp butter for the cake tin
- 2 tbsp spelt breadcrumbs for the cake tin
- 150 g spelt flour type 700
- 100 g sugar
- 100 g butter
- ½ teaspoon vanilla sugar
Preparation of the spelt crumble apple cake
For the dough, mix the spelt flour, sugar, bicarbonate of soda and vanilla sugar. Add the water and butter and knead quickly to form a dough. Place the dough in a small bowl, cover and leave to rest in the fridge for 30 minutes.
In the meantime, prepare the crumble. To do this, knead the spelt flour, butter, sugar and vanilla sugar into crumbles and then chill. Carefully coat the baking tin with butter and sprinkle with spelt crumbs. Then take the dough out of the fridge, roll out thinly and place in the prepared tin. Pull up the edges of the dough and chill again. Preheat the oven to 180°C top/bottom heat.
Wash and halve the apples, cut out the cores and chop into small pieces. Fold the cinnamon into the chopped apples and pour into the lined cake tin. Take the crumble out of the fridge and crumble over the top. Bake the cake in the preheated oven on the middle shelf for approx. 45 minutes.
