Ingredients for the cream

for 4 persons

  • 1 dl sweet must (1)
  • 2 tbsp cornflour, lightly heaped
  • 2 eggs, beaten
  • 5 dl sweet must (2)
  • ½ lemon, juice and zest
  • 2 tbsp sugar
  • 2 dl cream, whipped

Preparation of the sweet must cream

The homemade sweet cider cream made from selected Swiss apples is a delicious dessert classic. With its fruity, smooth flavour and creamy consistency, it tantalises the senses. For a particularly fine texture, we recommend passing the crème through a sieve after cooking.

  • Mix the sweet must (1) with the cornflour, add the eggs and mix well.
  • Place the sweet must (2), lemon juice and zest and sugar in a pan and bring to the boil. Remove the pan from the heat, add the egg mixture while stirring, return to the heat and bring briefly to the boil, stirring constantly, until the mixture has thickened into a cream.
  • Remove the pan from the heat and immediately pour the cream through a sieve into a bowl. Cover and leave to cool. Fold in the cream.
