Styrian scarlet runner bean salad with pumpkin seed oil

Ingredients
1/2 kg dried scarlet runner bean (The Styrian scarlet runner bean is now also available with the EU seal of origin G.U.)
1 onion
Cider vinegar
Pumpkin seed oil
horseradish
Salt, pepper
Method
Soak the scarlet runner beans in lukewarm water the day before. The next day, place the beans in the soaking water and boil until soft (approx. 1 ½ hours). Don’t forget to salt the water.
Put the cooked scarlet runner beans in a bowl, sprinkle with finely chopped onion, season with vinegar and
Styrian pumpkin seed oil, season with salt and pepper.
