    Linseed Potatoes

    Recipe of the region Mühlviertel

    Ingredients for the Linseed Potatoes

    1 1/2 kg potatoes
    500-700 ml milk
    1/8 l linseed oil (quantity according to taste)
    1 tbsp flaxseeds
    Smoked salmon as desired
    Some chives for garnish
    Salt, pepper

    Preparation of the Linseed Potatoes

    • Cook potatoes in their skins. Peel while still hot and cut into slices.
    • Bring milk to a boil and mix the warm potatoes with it – the potatoes should be lightly covered.
    • Cook while stirring constantly until a creamy mixture forms.
    • Season with salt, pepper, and linseed oil. Important: The linseed oil should not boil, as this can create a bitter taste.
    • Then arrange and garnish with linseed oil, toasted flaxseeds, and chives.
    • Finally, add smoked salmon on top of the linseed potatoes and enjoy immediately.
