    Weinviertel Pumpkin Goulash

    Ingredients for Weinviertel Pumpkin Goulash

    300 g Hokkaido pumpkin
    3 tbsp Sunflower oil
    300 g Onion, diced
    3 cloves Garlic, diced
    1 tbsp Paprika powder
    2 tbsp Tomato paste
    A dash of Vinegar
    400 ml Vegetable broth
    ½ tsp Ground caraway seeds
    1 pinch of salt
    1 pinch of pepper
    150 g Potatoes

    Weinviertel Pumpkin Goulash

    1. Halve the pumpkin, remove the seeds, and then cut it into large pieces.
    2. Put the sunflower oil, onion, and garlic cloves in a pot and sauté the ingredients until translucent.
    3. Add the paprika powder, tomato paste, vinegar, vegetable broth, and 150 grams of the pumpkin. Season everything with caraway seeds, marjoram, salt, and pepper, and let it simmer for 10 minutes.
    4. Then puree the pumpkin.
    5. Now mix in the remaining 150 grams of pumpkin and the potatoes, and cook everything over low heat until tender.
