South Tyrolean apple strudel
Recipe of the region Tramin – Lake Kaltern
Ingredients for the short pastry
(2 strudels)
500 g flour
1 packet of baking powder
4 free-range eggs
180 g margarine
200 g sugar
Vanilla sugar
Some milk for coating
For the filling
10-12 apples
Sugar
1 packet of vanilla sugar
Sultanas
Rum (optional)
Method
Knead together the flour, baking powder, eggs, margarine, sugar and vanilla sugar to form a smooth dough. Leave to rest for approx. ½ hour.
For the filling, peel the apples, cut them into small pieces and mix them with the sugar, vanilla sugar and sultanas. You can also add some rum if desired.
Divide the dough into 2 pieces, roll it out and fill it. Coat the strudel with the cold milk. Bake at 180 °C for around 45 minutes.
Sprinkle icing sugar over the strudel while it is still warm and serve with vanilla sauce (optional).
