Bacon Dumplings

Ingredients for the Filling
350 g Freller’s bacon (fresh, with a bit of fat)
1 onion
Parsley
Ingredients for the Potato Dough
1 kg potatoes
1 egg
200 g all-purpose flour
Salt
Ingredients for the Topping
3 eggs
200 ml cream
Salt
Preparation of the Bacon Dumplings
- Cut bacon and onion into small cubes. Finely chop parsley.
- Mix everything together and form small bacon dumplings (about 50 g each).
- Cook potatoes, peel them, and press them through a potato ricer while still hot.
- Add flour, egg, and salt to the potatoes and knead into a dough. Shape into a roll.
- Cut about 100 g of dough per dumpling. Place the small bacon dumplings in the center and form dumplings.
- Arrange in a greased baking dish and bake in a preheated oven at 170°C for about 20 minutes.
- Whisk cream, eggs, and salt together and pour over the dumplings.
- Bake again for about 20 minutes until golden brown.
