Caramelized Semolina Pancake

Ingredients for the Semolina Pancake
900 ml milk
100 g butter
10 g vanilla sugar
Pinch of salt
Zest from 1/4 lemon
180 g semolina
6 eggs (separated)
180 g granulated sugar
50 g butter (for caramelizing)
50 g granulated sugar (for caramelizing)
300 g berry compote
Preparation of the Semolina Pancake
- Bring milk, butter, and vanilla sugar to a boil, add semolina, salt, and lemon zest and let it swell. Let it cool down. Process while still lukewarm.
- Beat egg yolks until foamy and fold into the semolina mixture.
- Beat egg whites with sugar until glossy and fold into the semolina mixture.
- Bake in a greased dish at 150°C for about 55 minutes.
- Chill. Cut into 2-centimeter thick strips and then into 2-centimeter cubes.
- Melt butter in a pan, caramelize sugar, roll semolina pancake in it, and heat it up.
- Best served with berry compote.
