Waldviertel carp
Ingredients for 4 persons
4 carp fillets (180 grams each)
salt and lemon
some flour for rolling
Ingredients for the cap
4 medium boiled potatoes
a little salt
poppy seeds to taste
2 tablespoons of breadcrumbs
2 eggs
parsley
Waldviertel carp
Season the carp with lemon juice and salt (you can be generous with the salt), coat in flour and set aside.
To make the topping, mash and season the cooked potatoes. Then mix together with the poppy seeds, breadcrumbs and eggs and add the parsley.
Fry the carp in a hot frying pan with the skin side facing downwards. Then turn over and put the topping on the upper side. (The fish doesn’t need to have finished cooking.) Put the fish on a tray and bake at a high temperature in the oven or salamander. The fish is ready when the topping is lightly browned.
Then place the fish, parsley potatoes and green salad on a plate and serve.
