Waldviertel poppy dumplings
½ kg potatoes cooked the day before
250 g flour
30 g butter
1 egg
salt
butter for the pan
12 tbsp crushed grey poppy seeds
8 tbsp fine crystal sugar
2 tsp vanilla sugar
1 small glass of rum
Waldviertel poppy dumplings
Mash the potatoes and knead to a soft dough together with flour, butter, a pinch of salt and an egg. Shape into rolls of finger thickness. Use a dough scraper to cut out approx. 3 cm pieces and roll them into dumplings. Put the dumplings in boiling water until they swim to the surface. Drain and swirl in melted butter, granulated sugar, vanilla sugar and rum. Mix the dumplings with the grey poppy seeds and sprinkle over icing sugar before serving.
