
Blueberry pancakes

Ingredients
1 l blueberries
4 eggs
200 ml milk
200 g flour
Salt
Butter to deep-fry
Icing sugar for sprinkling
Method
Prepare a medium-firm dough from the ingredients, then fold in the blueberries. Put the butter in a frying pan, but don’t let the butter get too hot. Spoon in small flat cakes and bake on both sides until golden brown. Repeat this again and again with fresh butter until the dough is used up. Sprinkle the finished pancakes with icing sugar. Serve with milk or stewed fruit.
