Rocket and parmesan salad
Ingredients for 4 people
6 EL tablespoons of white balsamic vinegar
1 TL teaspoon of honey mustard
6 EL tablespoons of olive oil
Salt & pepper
4 tablespoons of pine nuts
150 g fresh figs
250 g fresh rocket
50 g Parmesan
2 tablespoons of walnuts
100 g LAND-LEBEN soup pearls
Preparing the rocket and parmesan salad with soup pearls
Mix together the white balsamic vinegar with the olive oil, spices and mustard. Mix until frothy with a blender for several minutes.
For the rocket & parmesan salad: slice the parmesan into shavings with a knife or grater. Wash the figs and cut them into halves or quarters depending on their size. Wash the rocket and shake it dry. Roughly chop the walnuts. Marinate the rocket with the dressing in a large bowl and mix well. Put on the plate. Decorate with parmesan, crunchy LAND-LEBEN soup pearls, fresh figs and walnuts and serve immediately.
