Ingredients for 4 persons
200 g shoulder of pork (lean)
1 l water
mirepoix, salt, pepper, marjoram
1 small onion
40 g butter
40 g flour
400 g potatoes
green parsley
Method
Cook the meat in the mirepoix until soft. Roast the onion in butter and flour, pour in the meat stock and let it cook. In the meantime, add the peeled, diced potatoes to the soup and cook until soft. Add the minced meat and parsley to the potato pot and season well.
